I'm also highly interested in this feature - for use in our on-prem installation. This feature is built into the iOS MDM Protocol since iOS 9 (for supervised devices). https://developer.apple.com/business/documentation/MDM-Protocol-Reference.pdf

To send a DeviceName command (available only on supervised devices or devices running macOS v10.10 or later),
the server sends a dictionary containing the following keys:

    Key: Item
    Type: String
    Content: DeviceName

    Key: DeviceName
    Type: String
Content: The requested computer name and local host name for the device.

I'm used to this feature with a former MDM solution (AirWatch) and it was working like a charm. Now, with Sophos, we have dozens of "iPhone" devices and we're unable to set the name remotely. Of coure we do not want every user to name the device themselves.

I fully agree with this. Or better: include a function in the EAS proxy module to let the proxy automatically modify the Exchange quaratine (via Powershell easily done I guess).

So, I guess you know the difference between both types? Maybe these articles can help you to understand why this behaiviour can not be changed by Sophos.
    https://community.sophos.com/kb/en-us/124410
    https://community.sophos.com/kb/en-us/127137

What I can say from my own experience: the app push notifications (which include the preview) are working really good if you use the app regulary. As explained by Sophos in the first article:
"...the operating system will grant this access based on internal rules and heuristics and may even suspend the app altogether...."
"iOS continuously optimizes its behavior based on user patterns, which means that as an app is used more frequently, its priority increases and the app will not so easily be pushed to the background or suspended to the device storage."
In other words: use the app more often and the problem will be solved :)
